Cheese Stuffed BBQ Meatloaf

  • 1 1/2 lbs lean ground beef
  • 1 egg (lightly beaten)
  • 1 English muffin, toasted & crumbled into breadcrumbs
  • 1/4 cup fresh parsley
  • Salt & pepper to taste
  • 1 tbs Italian seasoning
  • 4 minced garlic cloves
  • 1 tbs Worcestershire sauce
  • 2 tbs dried onions
  • 1 tbs stone ground mustard
  • 2 tbs ketchup
  • 3-4 light mozzarella sticks
  • ¼ - ½ cups BBQ sauce
  • (1) 20oz package Main St Bistro® Signature Macaroni & Cheese
  • (1) 24oz package Main St Bistro® Signature Mashed Potatoes


  1. Preheat oven to 375 degrees F. 
  2. In a large bowl, combine all ingredients except BBQ sauce and mozzarella sticks.  Do not overmix.
  3. Lightly grease a small casserole or loaf pan. Take half the mix and place on the bottom, then place the mozzarella sticks on top.  
  4. Add remaining meat mixture, and then pour half of the BBQ sauce on top.
  5. Cover with foil and bake 45-55 minutes. 
  6. Remove foil and pour remaining BBQ sauce on top.  
  7. Return to oven and set temperate to broil. 
  8. During broiling, heat Main St Bistro side dishes in microwave for 5 minutes per package directions.
  9. Broil meatloaf 3-5 minutes or until top is golden brown and caramelized.
  10. Remove from oven and serve with side dishes.
